Types of coffee bean processing

          Before becoming fresh coffee beans in Davin Cafe, they must go through many processes, whether harvesting or storage. In this article, we will talk about coffee bean processing, which is an essential part. There are 3 types of processes as follows:

  1. Natural Process

          The harvested cherries are washed and dried on a clean grid in the sun. They must be spread out so that they do not overlap each other. This has been a traditional method since ancient times. It takes about 30 days to do this.

  1. Washed Process

          The cherries are put into a machine to separate the seeds and pulp. The seeds inside are washed with water to remove the mucus. This allows the coffee beans to dry faster. It takes less time to dry than the dry method, which is more popular today. It is suitable for making general-grade coffee. It takes 7 days to do this.

  1. Dry and wet processing (Honey Process)

          The method is similar to the Washed Process. In the first step, the cherries are put into a machine to separate the seeds and pulp. However, the separated seeds are dried in the sun without removing mucus. This results in coffee beans that are light brown, like honey. It takes 14 days to make.
